Secreto or pluma? A guide to Iberian pork cuts

Secreto and pluma catch your eye on a menu, but their names do not tell you what to expect. Both are Iberian pork cuts, not beef. At Asador Ruta del Ibérico we serve them from the charcoal grill; understanding their shape and texture makes choosing easier.
Secreto: marbling and a distinctive bite
Secreto is a flat cut with clearly visible streaks of fat. That combination of meat and fat is part of its appeal on the grill. It is worth considering if you enjoy pronounced marbling and a cut with a distinctive bite.
Pluma: a small cut next to the loin
Pluma is a triangular cut whose shape resembles a feather, taken from the front end of the loin. Its tender texture is one of its attractions. It also contains fat: ordering pluma does not mean choosing a completely lean piece.
Which should you choose for your first taste?
If visible marbling appeals to you, start with secreto. If tenderness is your priority, consider pluma. There is no winner for every table: the individual piece and your own preferences matter more than a ranking of better or worse.
The name of an Iberian pork cut alone does not tell you the animal’s diet or breed percentage. If you would like those details for the product being served, ask our team. They are separate from the cut’s shape and location.
At La Ruta, the choice meets the charcoal grill
Our menu includes charcoal-grilled Iberian pork secreto and pluma. Check the current description and sides when ordering. Please tell our team about allergies or intolerances before choosing, so the meat, sauce and accompaniments can be considered together.
Choose a wine without overcomplicating it
As a starting point, a red such as Cepa 21, available on our wine list by the glass and by the bottle, offers red fruit and floral notes. That is a style suggestion, not a rule: you can also open the digital wine list, compare two wines and show your choice to your waiter.
Find us at Avda. del Sol 18, Torrequebrada, Benalmádena Costa. Take a look at the menu before visiting. If you are still deciding between secreto and pluma, tell us which kinds of meat you usually enjoy: that is the best starting point for helping you choose.
